
Coconut matcha latte overnight oats
Before going to bed, put together a morning treat to start tomorrow off right.

- 1 ½ c rolled oats
- 3 tbsp unsweetened shredded coconut, plus 2-3 tsp for garnish
- 2 tbsp chia seeds
- 1 c milk of choice
- ½ c coconut yogurt, plus 4 tbsp for serving
- ½ tsp pure vanilla extract
- 1 tbsp honey or maple syrup, warmed
- 1 mango, sliced
- In a large bowl or a lidded, 32-oz jar, combine the oats, shredded coconut and chia seeds.
- Separately whisk together the matcha, milk, yogurt, vanilla and honey.
- Pour the matcha milk over the oat mixture. Tighten the lid and shake well or mix everything in a bowl.
- Transfer to an airtight container. Chill for 4 hours or up to 5 days.
- To serve, divide the mixture among 4 cups and top with sliced mango, a spoonful of yogurt, shredded coconut and freshly-ground matcha powder.
